Cucumber, tomato and coriander raita with mango chutney and lime pickle

 

Ingredients

  • 2-3 large tomatoes
  • Half a cucumber
  • 1 tub of natural yoghurt
  • Half bunch of coriander or mint~ washed and chopped
  • 1 lemon juice and zest
  • A grind of black pepper

Method

  • Wash and cut the tomatoes in small dice, taking out the stem pieces. Peel the cucumber, slice it in half, de-seed with a teaspoon and cut it into strips, then similar size dice as the tomato.
  • Mix with the yoghurt, coriander or mint, season with the lemon and black pepper.
  • Place into a suitable bowl for serving, can be made at least one hour before hand and refrigerated. Serve along side the mango chutney and lime pickle, with a bottle of hot chilli sauce, for those that like it extra hot!
