Roast potatoes and whole garlic
Ingredients
- 150-200 grams of potatoes per person
- 1 whole clove of garlic per person
- 3-4 desertspoons of balsamic vinegar
- A little oil for top of garlic and roasting dish
- Salt and pepper
- 1 large roasting dish~ pre-heated
- Pre-heated oven to 200oC
Method
- Peel or scrub the potatoes and cut into quarters or similar size pieces.
- Lay the whole clove of garlic on its side, cutting off just enough to reveal the garlic tops. Drizzle over the balsamic vinegar a little olive oil and salt.
- Place the potatoes on the hot roasting dish with the garlic at the side, turn the potatoes every so often, both will take approximately 40-50 minutes to cook.
- Garlic this way is wonderful, little pods of garlic puree, which you take by the fingers then squeeze into the mouth.
