Leeks with lemon and hemp or olive oil
Ingredients
- 4 small or 2 larger Leeks
- Drizzle of hemp or olive oil
- 1 lemon~ juice and zest
Method
- Trim the leeks saving as much green as possible, slicing them into 4-8 pieces depending on size.
- Wash them thoroughly paying particular attention to the tops. Steam for 4-5 minutes until "just tender".
- Drain, place into a serving dish and lace with the lemon, hemp or olive oil.
Leftovers:
Very good served up as a salad, on its own or as a base for something else.
