Green beans with lime or lemon and hemp or olive oil dressing

 

Ingredients

  • 70-100 grams of green beans per person
  • 1 lime or lemon~ juice and zest
  • 2-3 dessertspoons hemp or olive oil
  • Black pepper
  • Medium pan with tight fitting lid

Method

  • Top and tail the beans, and slice if appropriate.
  • Put about an inch of water in the pan and bring to the boil, add the beans, put on the lid and bring rapidly back to the boil, turn down to simmer gently for 5-7 minutes. This depends on how crunchy you like your beans, with a squeak as you bite into them, seems about right.
  • Drain them, and put them back on the flame for just a second with the lid off, to evaporate any excess water in the pan.
  • Remove from heat and add the lime or lemon juice, zest, oil and a twist of pepper, mix thoroughly and serve.

Leftovers:

There are not usually many. If there are, with a little balsamic vinegar on their own or mixed with the other roast vegetables as a salad.
