Steamed spring cabbage with toasted sesame seeds and walnut oil
Savoy cabbage is a personal favourite, lightly steamed then laced with a simple dressing, some finely ground whole hemp seed added is another lovely variation as with toasted and ground sunflower and pumpkin seeds.
Ingredients
- 1 cabbage
- 2 dessertspoons of sesame seeds
- 2 dessertspoons of walnut oil
- 1 steamer or pan with a little water
Method
- Remove and discard to compost any damaged leaves, slice the cabbage in half, cut out the V shape of the stem, and slice into smaller wedges - one per person.
- Put them into the steamer 8-10 minutes. Lightly toast the sesame seeds in a dry pan. When the cabbage is tender drain well and place into a serving dish.
- Sprinkle over the sesame seeds and drizzle with the walnut oil. Other variations for the dressing: a spoonful of seeded mustard, lemon or lime juice, hemp or olive oil, whole ground seeds and nuts make nutritious additions to spice up the humble cabbage and steamed vegetables.
Leftovers:
Cabbage salad! Shredded the cabbage, prepare a dressing for example: a small piece of grated ginger, splash of tamari and squeeze of lemon or limejuice. Mix together and lace it over.
