Spinach salad with lemon hemp dressing
Eating spinach is one of the great ways of getting lots of chlorophyll or "liquid sunshine" into your diet, with a lemon and hemp oil dressing is a sound way of getting a good spectrum of excellent nutrition into your body.
Many varieties of spinach sold in bags are so tender they do not require much preparation, or even washing. If you have brought it by the bunch, remove any tough looking stalks, then give them a very good rinse in a sink or bowl of water, drain or spin it well.
Ingredients
- 1 good handful of spinach per person
- 2 lemons~ juice and zest
- 50ml Hemp and-or Olive oil
- 2 dessertspoons Dijon mustard
- 20 grams hemp seed
- Salt and pepper
Method
- Grind the Hemp seeds in the coffee grinder.
- In a small bowl, mix it with the mustard, lemon juice and zest, then while still mixing slowly pour in the oils. Season to taste.
- Serve with the polenta wedges and hummus.
Leftovers:
Once you dress a salad, it will only hold an hour or so before the leaves wilt and become unappetising. So only dress the amount of salad you know you are going to eat.
