Papaya with lime and mint,

crunchy muesli topping with cashew, sunflower and shelled hemp seed cream

 

Papaya for breakfast is great way to wake up the taste buds especially with lime. Strawberries or melon also work well. The shelled hemp seed just sprinkled on top with the lime and mint, with a drizzle of hemp oil is wonderful.

Ingredients

  • 1 very yellow sweet-smelling papaya
  • 1 lime
  • 8 to 10 mint leaves
  • 50 grams muesli

Method

  • Cut the papaya in half and scrape out the little black seeds, then cut into segments making it easer to pare off the skin. Slice into edible size chunks into a bowl.
  • Dress with the chopped mint, juice and zest of the lime.
  • Prepare the nut cream, and serve spooned on top of the papaya sprinkled with the muesli.
