David McCaw, Shaman chef is pleased to announce summer dates for Cooking with love 2009-courses in unique cookery, bread and jam making.
Experience first hand, David's Way. Work side by side with him to create what he calls the Shamans Kitchen bringing positive energy and inspirational food into your life. Courses are suitable for people of all ages that follow a vegetarian/ vegan diet as well as those who simply choose to eat less rich food, dairy and meat.
Cooking with Love~ Healing through Food
Shamanism is about experiencing our connection with the Earth, each other, food, inner health, and the integral part these play in our lives. Using simple shamanic practises to utilize the energy around us, setting intentions for the day, allowing the opportunity to bring the element of love into our cooking and lives.
Two-day practical cookery course
Hands on with David in the kitchen, we set the intentions, feel the energy and get cooking!
Replace cream, eggs and dairy with delicious seed and nut creams both sweet and savoury.
From simple base recipes and methods create a range of exciting dishes such as mushroom and celeriac stroganoff with cashew nut cream, chilli roasted pumpkin and lentil layer bake, roasted root vegetable and creamy lentil cottage pie.
From the Sprouted Garden raw sprouted hummus and easy falafels, learn the secrets of salad dressings and healthy mayonnaises.
For dessert carrot cake with a sunflower, lemon and maple frosting and pumpkin and ginger tart with shelled hemp seed cream.
Explore hemp energy shakes and smoothies.

One-day demonstration course
David takes you on a journey into a shaman's kitchen and demonstrates his recipes: How to replace cream by using seeds and nuts, to thicken without using eggs, make dressings that taste rich and creamy and yet are positively good for you.
Create your own Sprouted Garden of sprouted beans and lentils and learn recipes to use them in. Showing you how to create a range of dishes from simple bases with recipes that are easy to
re-create, food that will delight you, your family and friends.

Bread and Jam making course
The care we take in producing bread reflects and perhaps defines the society we live in. Learn how to make your own fantastic, organic bread in his introduction to dough making, kneading and proving course.
Work alongside David to understand how to use yeast, and then produce a variety of breads, buns, focaccia and pizza bases.
Learn the principals of jam making and make your own.

Open to all levels of baking experience. Advanced Bread Course dates to be announced.
Dates by arrangement: Join David on a one to one basis in The Fold Kitchen. Be part of a shamanic kitchen team and learn more advanced techniques and practices, culminating in preparing lunch for the ecoCafe
Open to those having attended the 2-day practical course and confident cooks/chefs.
